Nancy's Chicken Quinoa Salad

Nancy's Chicken Quinoa Salad

3 cups cooked and cooled quinoa

2 cooked chicken breasts (diced)
2 zucchini (diced)
1 slice red onion (diced) or more if you like
2 cloves fresh garlic (minced)
1/4 cup balsamic vinegar
2-3 TB olive oil
1 tsp thyme
2 basil leaves cut in strips
10 cherry tomatoes (halved)
salt and pepper (I used sea salt and a pepper grinder)
add a few pine nuts to the top (optional)

Put all ingredients in a big bowl and mix well. Taste to see if you need more of any seasoning. Make it your own!
